Yellow Chanterelles are the most commonly requested chanterelle in the PNW, and for good reason!

White Chanterelles are larger and more flavorful, often fruiting near their more common yellow cousins.

The winter chanterelle is a smaller version with a distinctive longer stem. These appear with the beginning of winter sometimes known as "yellowfoot" mushrooms.

These unique mushrooms have a seafood smell and bright red lobster color which gives them their name. They are meaty and have a great flavor when cooked.

Hedgehog mushrooms are flavorful and get their name from the little hairs on the bottom of their caps. Some people love the flavor more than chanterelles!

Bears head is an intresting mushroom. Some people call it coral mushroom, but coral is actually different. These are rare and usually VERY large.

The Matsutake or Pine Mushroom is wildly praised in Asia, mainly Japan and Korea where it can fetch very high prices for it's unique aroma and flavor.

The KING bolete is a famously loved mushroom from around the world. It has many names like "porcini", "Steinpilz", "белый гриб"

Black Morels are famous for their delicious flavor and unique appearance. They are excellent dried and rehydrated and are one of the best mushrooms to find.

The Yellow Morel is a delicious local favorite. Harder to find but worth the search. They impart an amazing flavor and should not be missed.

The Black Truffle, legendary in it's flavor and difficulty to find. These mysterious fungi grow under the ground, their aroma is unique and highly prized.

The White Truffle is just as amazing as the black. Found in the PNW, it's a rare find, but the fresh flavor and aroma are a real treat to those that go searching.
